A Good Meal

Jeff and I are starting to get it together this week.  We finally had a decent meal.  Jeff made Tortilla Soup and it was delicious.  Here is my recipe:

8 ounces carrots, diced

8 ounces celery

8 ounces onions

1/2 teaspoon garlic powder

salt and pepper

2 tablespoons corn oil

4 cans chicken broth

1 can tomatoes, diced

1 can Rotel tomatoes & chilies, Diced

1 (1.25-1 1/2 ounce) packet taco seasoning

1 (10 count) package corn tortillas, broken into small pieces

12 ounces chicken meat, diced, poached or grilled fajita meat

1 cup milk

12 ounces monterey jack cheese, shredded

corn tortilla chips, broken into small pieces

  1. Saute carrots, onions, celery in corn oil, Garlic Powder, Salt and Pepper until tender.
  2. Add chicken broth and bring to boil.
  3. Add tomatoes, Rotel, taco seasoning, and chicken.
  4. Cut Tortillas into small pieces and add to broth mixture.
  5. Let boil for 20 minutes or until tortillas are thoroughly incorporated into soup stirring occasionally to keep from sticking.
  6. Reduce heat and add 8 oz. cheese. Simmer for additional 10 minutes.
  7. Add milk and simmer for additional 10 minutes.
  8. If thicker soup is desired, add more diced tortillas and let incorporate into soup.
  9. Garnish with shredded cheese and broken tortilla chips.
  10. Substitutions: 1 cup Masa Harina (Masa Flour) for 1 12 ct. package of Yellow Corn Tortillas Gradually add masa flour mixing into broth.
  11. Mixing thoroughly into broth.
  12. If thicker soup is desired, add more masa flour

We also add pinto beans.

This is one of my favorite dinners. 

Things are still well.  Jillian was crabby this afternoon…but then again we ALL were.  Jeff seems to think it is ok for no one nap and then they can just go to bed early.  Well, he doesn’t seem to hear the 4 hour whine-fest that happens if we try his method.  It must be a Dad thing.  And since the no nap system only works for him we are dumping it. Ha ha!! ;)  Tomorrow, naps all around.  And LONG ones too!!  Then a late night with a movie and popcorn.  Now that is the life.  Oh wait…we have clinic on Thursday.  Bummer.

Sunday we have a HopeKids event!!  We are going ice skating.  The local ice skating rink is giving HopeKids the rink for several hours.  Oh, the kids are SO excited!!  Even if Jillie is hospitalized this Thursday we will still take the other kids.  We can’t miss this!!

Sounds yummy, I’ll have to try it! Praying that Jillian won’t miss the HopeKids Skate! Naps are good!! :)

Ice skating sounds like such fun! Ooooo…and tortilla soup after ice skating would be perfecto. I like it with black beans and diced avocado thrown in at serving time. Mmmmm…
