Cranberry Pork Roast

I buy my meat at the local (that is a relative term) farmer’s market because I like seeing the person that is benefiting from my purchase.  I like chatting with them and getting to know them.  I especially enjoy knowing that the animals that I am eating had the best life possible and lived just the way they were made to live.  And I know they were/are healthy.  I dunno, it just gives me warm fuzzies all over.

Well, the pork people at the farmer’s market are just fabulous people.  I feel so good about supporting their business so we have been eating more pork lately.  The chicken guy is a jerk.  So, there you go. :)

I originally found this recipe on All Recipes but I can’t find it again.

Ingredients:

Pork roast

Garlic

Cranberries

Onion

Honey

Salt and Pepper

The first time I made this I used onion rings.  Diced onions are so much better.

And garlic.  However much you like.

One can of cranberries, use more if you are feeling crazy.

I used two big tablespoons full.  This local raw honey is DELISH!!  And the people that sell it are nice too.  We buy it at Baker Creek each month.  Excuse the blurry picture.  I’m not left handed.

In with the yummy pork roast.  I’ve made this meal 3 times now and each time the family RAVES.  And honestly, the pork is so good I would probably have to do something really crazy to make it unpalatable.

Then I added some water because I looked in there and it didn’t look like there was much liquid.  And I got paranoid.  I added about one cup but it was probably not necessary.

Set the crockpot to high for 6 hours.  That’s what I did.  And it all cooked.

Serve with mashed potatoes, home frozen green beans, sweet potatoes and the drippings from the pork roast.  It is almost perfection.  And definitely Sally Fallon approved.
