Menu Plan Monday
A couple weeks ago I decided to move all of our dinners to lunch time. It seemed counter-intuitive to make a big mess and eat our biggest meal before bed. My kids are tired of eating soup but I’d really like to still get broth into their bodies so I am trying a new thing where we each have a cup of broth at breakfast. I wasn’t organized enough to make it happen last week.
Tuesday
Dutch Babies (thanks Jen. The kids love these.), bacon, fried potatoes
Roast, mashed potatoes, sweet potatoes, green beans
Salad
Dutch babies are 3 c milk, 12 eggs and 3 c flour mixed in a blender and dumped into a 9×13 pan with a stick of butter melted in it. Bake 20-25 minutes. It is not gluten free or soaked flour so we limit this but I owe the kids. I’ll cook the roast in the oven instead of the crock pot. Salad is quick and easy and I have my 10yo make it.
Wednesday
Eggs, broth, yogurt
Philly cheese steak, salad
Beans
Leftover roast is used for PCS and the buns are home made. Someday they will be sourdough. The beans I throw in the crock pot in the morning with a pound of meat and a can of tomatoes.
Thursday
Eggs, broth, rice
Chili and Cornbread
Salad
Goodness this week is full of wheat! I half the sugar on the cornbread.
Friday
Egg, sausage, broth and fried bananas
Pizza and salad
Beans
Homemade pizza. YUM-O! The bananas I slice and fry in coconut oil. I learned that from
Saturday
Eggs, broth and yogurt
Bratwurst and fruit
Salad
Sunday
Oatmeal, maple syrup and sausage
Hamburgers and fries
Beans
The fries will be baked with olive oil. I learned that from Robyn (who I won’t bother to link to).
Monday
Egg, rice, fruit
Beef/bacon soup

her main meal at noon. It is a fond memory.
I like the idea of the large meal at lunch too, but since dh isn’t here that wouldn’t work for us!

Shannon is working nights this week and we did this today and how NICE it was not to be fretting too much over the nightly meal! WOW!
I might see if we can’t do this more often when his schedule allows. :)

Do the Dutch Babies have a specific oven temperature? This sounds like a simple
way to feed a large bunch of folks!
I so need to do this too. We eat all our meals about 2 hours to late as it is.
I would love to do the biggest meal at lunch, too, but dh wouldn’t be here :o( When he’s out of town that’s the way we eat.
you can use coconut oil for the fries, too. It makes them really crispy if you get your oil on the cookie sheet hot first, then add the fries. But, that would be an adult thing to do to avoid the burn unit. ;-)
actually, it’s better to do the coconut oil in a cast iron pan on top of the stove to avoid fires. Be careful with using too much oil on your pan, inside the oven.

Ditto on the DH not being home for lunch. Though he IS home by 2:00….I wonder if I could institute a large late lunch and a light dinner? Hmmm….but wait that is lessons time. What I really need is a 12 year old or two….

Have you ever tried plantains? We are studing Africa for school right now and one of the recipes called for plantains, which I had never had. We found that you can slice them into circles and fry them (we used olive oil, bad momma!!) and sprinkle lightly with salt and they taste like fried potatoes!! We even used ketchup, they were great!! Is that how fried bananas taste too?
