Real Food Wednesday – Healthy Kid-Friendly Recipes

We all know how healthy pastured eggs are and my preference is that my kids eat eggs every morning. The Weston A. Price Foundation has this to say about eggs:
Egg yolk supplies cholesterol needed for mental development as well as important sulphur-containing amino acids. Egg yolks from pasture-fed hens or hens raised on flax meal, fish meal or insects are also rich in the omega-3 long-chain fatty acids found in mother’s milk but which may be lacking in cow’s milk. These fatty acids are essential for the development of the brain. Parents who institute the practice of feeding egg yolk to baby will be rewarded with children who speak and take directions at an early age.
Of course eating eggs can sometimes get boring and when the kids start to whine and complain "Eggs again?" I like to mix it up for them. Here are some ideas.
One of my favorites is eggs, potatoes and bacon. We just scramble these all together and it is wonderful. Jeff sometimes adds tomatoes and Italian seasoning.

This is a breakfast the kids had last week. This is our take on Egg Foo Young. We scrambled sausage and eggs together then served with a side of rice and chicken broth gravy on top. I love that gravy.

Now I have had Huevos Rancheros before and this was not it. The HR I had were eggs poached in tomato sauce served with beans and rice. But when I went looking for the recipe I ran across this which was also called Huevos Rancheros and thought it looked so yummy I postponed the poached in tomato sauce eggs. These are tostada shells fried in lard, topped with refried beans, cheese, an over easy egg and fermented salsa. It’s been a long time since I’ve tasted something so heavenly. I love this breakfast.

Then there is the old stand by egg burritos. This burrito has egg, bacon and tomato in it. I usually put green chilies in mine as well. The tortillas are not soaked or sprouted but someday they will be.

And then I wanted Eggs Benedict but couldn’t really find a recipe so I went with one on AllRecipes that has what they called a "cheese sauce". Let me tell you, that cheese sauce was not yummy at all. Next time I’ll make a real hollandaise sauce. What I saved in time and mental energy I lost in flavor and palatability.
So there you go. There are 5 different ideas to get you started. One fun thing to do is go to AllRecipes or your favorite recipe site and search for "egg". All kinds of egg recipes will come up. Then gather the kids around and ask them which one sounds good. The bad news is if you get the kids involved and start eating really yummy breakfasts all the time the kids will become food snobs and you’ll never be able to sneak cold cereal into your menu again. It’s a risk you gotta take.

I’m about to do a post with an Eggs Benedict recipe that’s very easy. And the Hollandaise sauce came from Julia Child, so you know it’s good. (I HATE that when I search online for recipes and that happens.)
We love eggs for breakfast, especially their versatility! It really is important to get breakfast right.

What is Chicken Broth Gravy and how do you make it? Looks pretty good!

I haven’t actually bought cereal in a long time, but my dd loves it. So I will sometimes make granola bars and for her crumble them up and pore raw milk over the top to give her the occational ‘cold cereal’ that she likes:)
we eat eggs and fried potatoes a lot! for breakfast (or lunch, or for supper). :-)
If you cut up leftover baked potatoes and put them in hot! melted coconut oil, in a cast iron pan, they get SO crispy and delicious. I can’t fry potatoes any other way now. :-)
Oh yum! We miss having sasuage from the pigs we raised and those super healthy homegrown eggs! I love the study Mother Earth News Magazine did when they did calculated studies in the difference between store bought and backyard raised eggs. It’s amazing the difference in vitamins and healthy fats!

MMMM, Huevos rancheros. I grew up with Huevos Rancheros Just like this. MY grandparents were born in mexico and she still raises chickens(right in the city in LOS ANGELES!!!) for fresh eggs. Sometimes if we have extra shredded beef, like a good Sonoran barbacoa(yumm!!), we throw that into the mix, it is so bad…but so very good :)
