Real Food Wednesdays – Egg Tacos

Real Food Wednesday is hosted today by Ann Marie.  She also posted a great hummus recipe. I am totally making this a staple food here from now on.  We used to love hummus, I just forgot about it.

Today I am posting yet another yummy egg recipe, egg tacos.  I was trying to mix it up the other day (getting tired of eggs) and came up with this.  EVERYONE, and I mean everyone, loved it!!  It is simple and easy too.

Pastured, organic scrambled eggs

Pastured, organic pork sausage

Tomatoes

Corn tortilla fried in coconut oil

Cheddar cheese (I should have used our home made cheese.  I keep forgetting it is in there!!)

  • we eat this almost daily. it is our favorite way to eat breakfast! sometimes we poach the eggs. when we had our own dairy, soured cream instead of cheese.

  • Oh my goodness that looks so DELICIOUS! I think I have a coupla corn tortillas (my homemade ones) in the fridge right now… and some pork sausage. I’m making this for breakfast!
